Last-minute cake mix hack for DIY gourmet gifts.
How did the end of 2020 and the holidays come up so fast? Wasn't it March yesterday? If you are like me, gifting and the need for treats sprung upon you, and these Chocolate Cabernet Whoopie Pies are your solution.
You do NOT need to be a master baker (giggle) or need to shop for much. This recipe is quick, budget-friendly and painless. You'll need:
1 box of cake mix (chocolate for this version, but if you're not a fan, choose a different flavor).
1/2 cup of melted butter (or vegan alternative)
3 eggs
1/2 cup of Cabernet Sauvignon wine (what I like to drink). HOWEVER, you can add a 1/2 cup of bourbon, whiskey, Kahlua, Bailey's, orange liqueur, etc. It all works! If you are trying to make this kid-friendly (like they don't have enough treats already) just use milk or a milk substitute.
Preheat your oven to 350 degrees. Mix the ingredients in a bowl. Fill a piping bag (or Ziploc bag with a corner hole cut) and pipe 2" circles of the batter on your baking sheet. Leave about 1" between the circles. Bake for about 10-12 minutes.
While you are waiting for your cookies to bake, you can make up some cream cheese frosting flavored with your liqueur of choice (or vanilla extract for kids). OR just use your favorite store-bought frosting or use our Boozy Jam as an alternative filling.
Cream cheese frosting:
1/2 cup butter, softened
1/2 cup cream cheese, softened
4 cups of confectioner's sugar
3 tsp of your liqueur of choice or 2 tsp vanilla extract
Blend all of the ingredients above either by hand or mixer. Scoop up the frosting into a piping bag or Ziploc. Make sure your baked pieces are completely cool and pipe onto one half of the whoopie pie and sandwich with the other.
If you like, you can roll the sides of the whoopie pies in chopped dried cranberries (pictured) crushed candy canes for the holidays, chopped nuts, sprinkles, etc.
